We will be back again this weekend Sunday, 06/27. The local blueberries that we use for our Blueberry Almond cheesecake are exceptionally sweet and delicious this year. Might I add, Dulce de Leche is my own personal favorite; just another reason why I think San Jose has impeccable taste! And of course, I didn&#8217;t bring nearly enough of the <a href="http://www.anticupcakeco.com/flavors#vanilla">Vanilla Bean Cheesecake</a> so there will be fresh batch of vanilla bean cheesecakes as well. <p>We will be at our first farmers&#8217; market this weekend, 6/06/2010 from 11am to 4pm at Santana Row in San Jose to showcase our favorite flavors of our <a href="http://www.anticupcakeco.com/wp-content/uploads/2010/06/Blueberry.jpg"><img src="http://www.anticupcakeco.com/wp-content/uploads/2010/06/Blueberry-300x276.jpg" alt="" title="Blueberry Almond Cheesecake" width="300" height="276" class="alignleft size-medium wp-image-404" /></a>delicious cheesecakes. Among those available will be our seasonal specialty, <strong>Blueberry Almond Cheesecake</strong> (photo left). This fantastic delight features locally grown organic blueberries with just a splash of amaretto liqueur. Other flavors available will be Citrus Delight, Java Chocolate Chip, Vanilla Bean, White Chocolate Raspberry, and Dulce de Leche! 			<content:encoded><![CDATA[<p>Over the past couple of months, I have been working on perfecting the &#8216;Lil Uns creations: cheesecake bites wrapped in delicious chocolate. And because the process of perfection is never ending, I have decided to post my adventures in chocolate coating cheesecake.<br />
<a href="http://www.anticupcakeco.com/wp-content/uploads/2010/05/023.jpg"><img src="http://www.anticupcakeco.com/wp-content/uploads/2010/05/023-300x199.jpg" alt="" title="&#039;Lil Uns - Phase 2" width="300" height="199" class="alignleft size-medium wp-image-390" /></a><br />
I know, to tempt you with these gorgeous babies is rough. The photo to the left is my personal favorite: Creamsicle &#8216;Lil Un, Vanilla Bean Cheesecake wrapped in orange white chocolate. Indeed they do look tasty and delicious, but they didn&#8217;t start that way. My first attempt at making these tasty morsels was somewhat of a mess, to put it lightly. I started by melting the chocolate wafers, slicing a cheesecake into little edible bites, and literally tossing those bites into the chocolate. I rolled them around to ensure even coating (a process I later discovered is called &#8220;enrobing&#8221;) and then set them aside to set. Easy enough, right? Well, not exactly. Apparently, you are supposed to remove as much excess chocolate as possible. Also, little pieces of the crust managed to detach from the cheesecake and make a mess of the chocolate for the bites that were to be dipped next. Delicious=Yes. Pretty=No.</p>
<p>So, I made some changes to this process: smaller batches of chocolate so I could always have a clean chocolate dunk, and the addition of tapping the bites to the side of the bowl to remove some of the chocolate. Voila! I had successfully made batch #2 of &#8216;Lil Uns. <a href="http://www.anticupcakeco.com/wp-content/uploads/2010/05/Raspberry-White-Chocolate-Lil-Un.jpg"><img src="http://www.anticupcakeco.com/wp-content/uploads/2010/05/Raspberry-White-Chocolate-Lil-Un-300x286.jpg" alt="" title="Raspberry White Chocolate &#039;Lil Un" width="300" height="286" class="alignleft size-medium wp-image-399" /></a>These were tasty and beautiful (for the most part) and were a good intro for my &#8216;Lil Uns creation. The photo to the left is another delicious creation: Raspberry White Chocolate Cheesecake wrapped in white chocolate. This batch of tasty morsels in various flavors ended up at the Sweet and Savory Festival in Oakland Mother&#8217;s Day weekend (see photo in previous blog post).</p>
<p>But, I&#8217;m still not happy with the whole dipping and tapping on the bowl thing. And here we arrive at batch #3 of &#8216;Lil Uns. The photo above is of my third attempt: Molded chocolate. Molding chocolate is relatively simple: melted chocolate in a mold, tap it out, add center, add more chocolate, let it set, DONE. Although less messy, it was not nearly as simple as I had hoped. As you may know, cheesecake is not typically ball shaped and so it doesn&#8217;t do very well in truffle mold shapes. This is something that I am still working on: shaping the cheesecake inside the chocolate mold. But hey, it&#8217;s progress!</p>

			<content:encoded><![CDATA[<p>After weeks of preparation for the Sweet and Savory Festival in Oakland May 8-9th, our hard work finally paid off. There was an amazing turnout and we now have many new die hard fans. Of course, I always knew our treats were darn good, but it is an amazing feeling to hear complete strangers agree. We brought four flavors to the festival: Citrus Delight (a HUGE success), Dulce de Leche (a close second), Java Chocolate Chip and Vanilla Bean. All flavors were well received and we got some great feedback.</p>
<p><a href="http://www.anticupcakeco.com/wp-content/uploads/2010/05/MeAtSSF.jpg"><img class="alignleft size-medium wp-image-422" title="Owner, Cynthia, at the Anticupcake Co Table - Sweet Shoppe Fest" src="http://www.anticupcakeco.com/wp-content/uploads/2010/05/MeAtSSF-300x274.jpg" alt="" width="300" height="274" /></a>Also, we unveiled our &#8216;Lil Un cheesecake bites which were also a hit. This little &#8216;uns are cheesecake bites in various flavors wrapped in chocolate. We started out with our signature vanilla bean cheesecake dipped in a smooth, creamy orange white chocolate. I called this one &#8216;the creamsicle&#8217; because it reminded me of my childhood absolute favorite ice cream bar. And indeed, it tasted amazing and everyone loved it. Perhaps because it gave them a grownup flash back to the same beloved childhood dessert.</p>
<p>We also unveiled several other &#8216;Lil Un flavors including raspberry white chocolate cheesecake in a white chocolate coating, cranberry cognac and milk chocolate cheesecake in a white chocolate coating, coconut dream cheesecake in a milk chocolate, white chocolate and orange white chocolate coating. The coconut in the milk chocolate was exceptional and reminded me of another childhood favorite: Mounds Candy Bar. Leaps and bounds more sophisticated and mouth-wateringly creamy, but reminiscent nonetheless.</p>

<p>In addition to this &#8216;Lil Un flavors, I have many other combinations in the works which I will be revealing soon enough. So if you were fortunate enough to try some of these cheesecake bites and you loved them just as much as we did, stay tuned for the next flavors. I promise they will be mind blowingly delicious!!</p>
<p>Now that we have finished with the Festival, we will be regularly attending farmers&#8217; markets in the south and possibly north bay area. 			<content:encoded><![CDATA[<p>If you follow us on twitter @anticupcakeco, you would know that we are officially sponsoring the <a href="http://www.sweetshoppefests.com">Sweet Shoppe Sweet and Savory Festival</a> in Oakland on Mother&#8217;s Day Weekend. Being that our cheesecakes are from my mother&#8217;s recipe, I think it&#8217;s very fitting (and DELICIOUS!) that we will be there to provide various flavors of our favorite mini cheesecakes. We will also be providing a large cheesecake for the dance off competition at the festival: whoever can dance the longest wins this treat!</p>
<p>We have also officially reserved tables at several farmers&#8217; markets in the South Bay and a few in the North Bay including Santa Row, Santa Teresa, Berryessa, and South San Francisco. We will start to appear in the markets after the Sweet and Savory Festival. Soon, I will post a schedule so you know which markets to find us in and when.</p>
<p>In other news, I have temporarily removed our cheesecakes from Cafe Zoe in Menlo Park. Many people have asked where they went and I realized I never let anyone know they were missing!! So, now you know. But this is only temporary. I am working out some kinks and I repost when they are back in the shop. If there are any flavors you would like to see there, let me know!!</p>

			<content:encoded><![CDATA[<p>And so the event was a huge success! We had a great turnout and everyone roundly enjoyed the wine and cheesecake combination and, of course, the delicious treats from Sent Sovi Restaurant.</p>
<p>Since the event, I have been busy preparing cheesecakes for going to local stores and cafés. One of my small delicious cheesecakes with your café would be delectable! I will soon be posting availability, so stay tuned.</p>
<p>Our availability in farmers markets is also coming soon: in March, I will be posting our local Farmer’s market schedule so you can satisfy your cheesecake craving any time of the week.</p>
<p>And of course, we are always available to cater your next event! Just send us an e-mail or give us a call (see contact page).</p>
<p>Remember, you should never deprive yourself of cheesecake!</p>
